Zencefil in Taksim was a good vegetarian place when I was in town a couple years ago. http://www.veggieplaces.co.uk/list_reviews.php?place_id=2669 . They have other places at this link as well. Many of the traditional Turkish dishes are vegetarian (like imam bayildi, which is stuffed eggplants). And of course, you can’t go wrong with “meze”s (kind of like tapas), most of which are vegetarian.

There is so so so much good vegetarian Turkish food. They must prepare eggplant a million different ways. Dolma are stuffed veggies like cabbage or grape leaves. Ciya, on the Asian side of Istanbul is fantastic. One of the three contiguous “branches” is mostly mezze and vegetarian, but almost every restaurant in the city will have lots of rice, and veggie dishes.
